Fire-Roasted Slow Cooker Pork Tacos

Ingredients:

2-3 pound pork loin roast
1 bag frozen fire roasted peppers and onions
1 (15 oz) can fire roasted diced tomatoes
1 tbsp minced garlic
1 tsp cumin
1 tsp smoked paprika
1 cup chicken broth
Taco Fixin's:  tortillas, cheese, cilantro, lettuce, tomato, etc.

Directions:

Put everything in the slow cooker.  Stir to combine.  Cook 8 hours on low until the pork falls apart and shreds easily.

Optional:  Season the pork with salt and pepper and sear in a skillet with hot coconut oil before placing it in the slow cooker.  This is not crucial, but it definitely gives the meat better flavor.

Serves:  An Army

    Have you considered posting photos with your recipes? I think doing so would help make them more Pinterest-friendly. I tried to post this recipe to one of my Pinterest boards (which is where I keep all of my recipes), and instead, received the following pop-up message: "Ooops! You need to upload an image or provide the 'image_url' parameter".

I have a few pictures that were previously taken and have been uploaded, but the time required to take decent pictures and upload them while wrangling a toddler and keeping things going while my husband works 90 hour weeks is too great right now. The reason I created this blog was to personally keep track of my recipes as efficiently as possible. I'm not concerned about being Pinterest-friendly at this point.
