Ground Beef and Zucchini Bowls

Ingredients:
1lb ground beef
1 onion, diced

3 cloves garlic, minced
8 mushrooms, sliced 
2 zucchini, cut into bite size chunks 
2 yellow squash, cut into bite size chunks 
1 small eggplant, cut into bite size chunks 
2 Roma tomatoes, diced

Salt and pepper to taste
Fresh parsley and extra-virgin olive oil to garnish


Directions:
Heat a skillet over medium-high heat. Cook the ground beef, onion, and garlic until the meat is browned.  Add the veggies and cook until tender.  Season with salt and pepper as needed throughout the cooking process.

Garnish with fresh parsley and drizzle generously with extra-virgin olive oil.


For a more filling meal serve over jasmine rice.

Serves 2 with leftovers
